Carbohydrates that
help Prevent Cancer

Not all carbs are created
equal. Recent research shows that whole grains, such as brown rice,
whole wheat, buckwheat and amaranth, have the same antioxidant effect as
vegetables -- and are powerful disease fighters. "Unlike the
antioxidants in vegetables, which are quickly released into the
bloodstream," says Melanie Polk, RD, director of nutrition education for the
American Institute for Cancer Research, "antioxidants in whole grains are
released only when they reach the intestine and colon." They help
prevent digestive disorders, and they can reduce your risk of colon and
breast cancer by ridding your body of toxic materials in food. Grains
such as spelt, quinoa, and millet also help prevent heart disease and
diabetes." They're easy to cook -- just boil them in broth or water.

Here are some tips from The
American Institute for Cancer Research (AICR) that can go a long way in
helping to prevent colon cancer:
- Eat mostly fiber-rich
vegetables, fruits, whole grains and beans: they have plenty of
cancer-fighting nutrients, protective compounds and dietary fiber.
- Eat fruit for dessert:
highly colored berries are particularly good choices because they are
high in fiber and contain the antioxidant anthocyanin.
- Eat less fat:
red meats, processed food and fast foods are high in saturated fat.
Try eating smaller portions (keep meat portions less than 3 ounces) or
have them more infrequently.
